Did tanks always do this?
When I was blowing up tanks messing around on Single Player Tac Mod, it blew up as normal. Though when I switched to a single player of the normal BF2 the tanks started doing this when I blew them up(the turret is falling off):

Yeh they do that know I saw it too, the turret blows up into the air and lands somewhere. (Heads up people, that turret aint made of air)

Educated guess says they simplified the online version to help with netcode.

I was noticing that this was the only tank that seemed to do this on Oman (didn't check all). So maybe it does it in the Tac Mod also, just didn't find a good tank.
