I think when u r looking at the scoreboard left click and go into Manage and there should be the option

Somewhere near the bottom left corner there is a little textbox where you can enter the players name you want to add.

Will the demo buddy list transfer over to the retail version? If it doesn't, I'm assuming we have to manually type in all the names? Anyone one know of an easy way to make the transfer?

I don't know, but a few people will be changing their names between the demo and retail, so the list is going to be cleared upon release.
