If overclocked right it'll beat some of the 8800GTS 640's... And for that price its the best card that'll play in my screen's resolution without having to pay for the ability to play higher (My 19" LCD only goes to 1280x1024, so to pay for anything more than 300 on a card is insane and useless)

Probably because 8x32MB comes out to 256 which is a nice round number for people to work with. Everyone's used to RAM in 128-sized chunks, so when you get an oddball number like 320 everyone's all like "whoa." The idea is that maybe game devs have their high quality textures that take up ~500 megs of RAM, medium textures at ~256, and low at ~128 or ~64, so those are the targets 3d card makers go for.
I'd imagine that 320 megs is fine, though, and that it will get fully utilized.
