I could never pick just one so here's a list of my favorites:

RPG: Chrono Trigger, Final Fantasy VII, Legend of Zelda: A Link to the Past, Panzer Dragoon Saga, Quest for Glory: So Want to be a Hero, Grandia, IceWind Dale II, Knights of the Old Republic

FPS: Goldeneye, Left 4 Dead, Bioshock

Strategy: Starcraft, Warcraft II, Final Fantasy: Tactics, Fire Emblem, Dragonforce

Action/Side-scroller: (I really don't like most games that fall in to this category save for these two) Metal Gear Solid and Castlevania: Symphony of the Night

Ya know, I was going to edit my post to include Goldeneye... loved that one too. Didn't care much for the 007 Gamecube titles, though.

Arma and Arma2. I expect to be here for a loooong time because of it. Amazing game, immersive and action packed. My other fav. is falcon 4.0! Falcon taught me how dedication = reward. Learning how to turn on a F-16 from the start is a feeling like no other.

My favorite of all time was probably playing on the Darktide (all pvp) server of Asheron's Call for about 6 years. Not only did I enjoy the open PvP but the monthly updates and storylines for me were epic, until about 2005 or so when it got stale for me and I moved to WoW. Which I don't play either anymore.
That's one game I wish I could turn back the clock and play all over again from the start. It's got great memories attached to it.

Age of Empires 2, I spent many many hours playing that game...

Project Reality is probably my #1 pick though, I've been playing it constantly for almost two years. Never before have I played a game with that much replayability.
