Ok this thread is due for an update, so while I've got some pasta sauce cooking, here's another super easy Beatnik staple meal. It's like most of what I cook - the meat is the main ingredient, everything else is a garnish.

Beatnik's Giant Chicken Caesar Salad

Ingredients:

1 head Romaine Lettuce
1 chicken breast
Soy sauce
Package of Cardini's Gourmet Cut Garlic Butter Croutons
Bottle of Cardini's Caesar Dressing (Cardini's is by far the best brand croutons and dressing I've found - I've even tried making my own dressing and croutons and this brand is still better)
Fresh Ground Pepper (I use Alessi brand)
Parmigiano Reggiano Cheese (the real deal with the rind saying "Parmigiano Reggiano" - NOT pre-shredded or grated Kraft cheese)

1. Put chicken in a bag and cover with 2-4 Tablespoons soy sauce. Let marinate for 10-15 min (max).
2. Prep the romaine. Cut 1 inch strips across the ribs, then slice those once down the middle. Wash using salad spinner or colander. Set aside to dry.
3. Grill the chicken on your trusty George Foreman grill, or broil. Make sure to season very liberally with ground black pepper. You really can't use too much pepper, since the soy sauce is so salty.
4. While the chicken cooks, assemble the salad. i.e. Arrange lettuce. Top with croutons. Top that with a modest amount of dressing. Top all that with freshly grated (preferrably using a microplane) Parmagianno Reggiano. Top all that with ground black pepper.
5. When the chicken's done, slice it across the grain, let cool a few minutes.
6. Top the assembled salad with the chicken, add another layer of dressing and parmagiano.
7. Add more parmagiano.

That's it. Nice and simple. They key to the salad, as well as most easy meals, is good ingredients. You really can't screw it up when you use good ingredients.

The final product should look something like this. Enjoy.

There are few things in life that are as comforting as a cold glass of milk and some chocolate chip cookies. As far as baking goes you really can't get much simpler and nothing warms a home like the smell of freshly baked cookies

Aculle's Dropped Chocolate Chip Cookies
ingredients
1/2 cup of butter
3/4 cup sugar
3/4 cup light brown sugar
2 large eggs
1 tsp vanilla extract (Do not use imitation)
2 1/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
12 ounce bag of chocolate chips (I use semi-sweet)

Preheat oven to 375. In a small sauce pan melt the butter. Sift the flour, baking soda and salt together in a large bowl. Whisk together the sugars, eggs, butter and vanilla. Add the wet ingredients to the dry. Mix until ingredients are combined. Add the chocolate chips. I personally only use 8-10 ounces but I listed 12 ounces for you chocolate lovers.

Take a kitchen spoon and scoop out a small portion of the dough and "drop" it on the cookie sheet. You should be able to get 20 cookies on a single sheet. This recipe should yield 40 cookies maybe less depending on how much cookie dough you sneak before they reach the oven.

Once the oven is preheated put a single cookie sheet in on the middle rack and bake for 12-15 minutes. I go with 12 minutes and this gives me crunchy outsides with soft gooey insides.

When the cookies are done, remove the sheet and with a spatula transfer the cookies to a cooling rack. Let cool for 5 minutes.

As I mentioned in my PB&J post, I love sandwiches. One of the sandwiches I make on a regular basis is tunafish. Canned tuna isn't the most appetizing foods but it does last a long time, its easy/quick and its still fish so its low in fat but high in protein and omega-3 (good for your heart). I prefer to use solid white albacore in water rather than chunk or in oil.

Anyways, one of the reasons I am posting this is that there can be more to a tunafish sandwich than just draining a can and mixing in some mayo.

Tiger Style Tunafish Sandwich
1 6 oz. can of tuna, drained
1/2 tomato, seeded and chopped
1 tbs mayo
3-4 tbs TryMe Tiger Sauce

In a bowl combine tuna with the chopped tomato, mayo and Tiger Sauce.

I keep the mayo in the recipe as it does help hold the tuna together and still provides a creamy base. TryMe Tiger Sauce not only takes the fishy taste of the tuna a couple of notches but it gives the sandwich a sweet and spicy flavor that makes the sandwich different from your average sandwich. The chopped tomato is really only there so I don't have to worry about balancing the slices later when I make the actual sandwich. For me one 6 oz can is enough for a single sandwich.

The rest of the sandwich
2 slices of whole wheat, toasted
2 slices of Extra Sharp Chedder Cheese
4-5 red onion rings
1.5 cup of baby spinach leaves
1 pickle spear on the side

Obviously, this part can change depending on personal preference and what you actually have on hand. This isn't much but I liked it enough that I think others might enjoy it and hopefully it allows others to think outside of the box when it comes to preparing everyday meals.

What kind of stir fry are you looking for? I've got about 20 different types that I could share, but as I'm sure nobody wants to read a mile long recipe post...well, you get the idea. Anyway, I've got every kind of meat covered as well as some vegetarian sir fry recipes. I can probably get you one posted in the next day or two if you give me your flavor.

Hell, you dont even have to go that far Cing, look at Iron Chef. Cat Cora is the first female iron chef in history and she just got that title not too long ago.
