Enjoy.
I'm trying this tonight since I need to eat soft foods this week, hope this is good.. Any name brands to use or regular?

I like that Breakfast Joe recipe.. Being suthin' I love my sausage and gravy with biscuits.

Going to try that.

@Vegabond - I find Jimmy Dean.. to be generally good. But if you want to get adventurous.. Andelle's comes to mind. They are 'cased' sausages.. but you can split open the casing, get to the sausage.. and mash it up with a fork.

My mom is going to kill me but I have to confess that I have found a better ragu recipe than hers.

Sugo Sciue Sciue (Neapolitan Fast Ragu)

1/4 cup of extra-virgin olive oil (virgin olive oil will work just fine)
1 large onion, peeled and minced
2 garlic cloves, peeled and minced (optional as this sauce is traditionally garlic free)
1 pound ground chuck
Small handful coarsely chopped Italian parsley
8 fresh basil leaves, coarsely chopped, or 1 teaspoon dried basil (try to use fresh basil)
1 28 ounce can tomatoes pureed with juice (I used crushed tomatoes in puree)
Salt and freshly ground black pepper to taste
1 pound spaghetti or rigatoni
Grated Pecorino Romano or Parmesan cheese for table use (it may be a bit more expensive but buy it as a wedge of cheese and grate it yourself. If your deli or super market grates their own get that but avoid the mass produced stuff. If you don't think you are going to use a lot it will keep well if you remove it from the packaging and wrap it in wax paper and place in a ziploc bag.)

Serves 4-6

Heat the olive oil in a medium sized, heavy skillet. Add the onion (and garlic, if desired), and cook slowly over low heat until the onion becomes very soft (they will become translucent). Add the ground chuck and saute over high heat, stirring frequently to break up any large lumps. Add the parley and basil. When the meat has lost all puinkness, add the tomatoes and salt and pepper to taste, and cook over medium-low heat until the tomato puree has mixed with the meat and becomes thick. This should take about 1/2 hour. Stir occasionally and keep an eye on the sauce so not to overcook.

Cook the spaghetti until al dente (I assume you know how boil spaghetti). Drain the pasta. Place the drained pasta in the skillet with sauce, and mix together over low heat (it's easiest if you do this a bit at a time rather than all the spaghetti at once. so that the pasta absorbs some of the sauce. Place the pasta in a shallow serving dish. Serve immediately and enjoy. Make sure everyone has enough Pecorino Romano or Parmigiano-Reggiano cheese to put on their pasta.

Growing up my family was well poor. My mom was always creative in cooking to make it seem like we had lots to eat. Enter Potato dog pie, name is wierd but its all we could ever think of.

Mashed Potatoes
Hot dogs
Sliced Cheese.

Cook the potatoes and hot dogs separately. Then in a cake pan or 9x11 baking pan you cut the hot dogs long ways and lay them on the bottom of the pan. Usually one package of 8 covers it good. Put all the mashed potatoes on the top of the dogs, then layer the very top with sliced cheese.

Bake this for about 15 minutes or until the cheese melts. I make this still today for me and my son, wife doesnt like it. Yeah its simple but its really really good.

that does sound very good trooper! I may have to put a little spin on it to get the folks in my house to eat it. my brother is on a real food kick (i.e. nothing processed or dehydrated) so at least two ingredients would have to be subbed (i'd swap fresh sausage for hot dogs and sliced block cheese for singles). with your permission of course.

That sounds pretty good actually. One thing ive found in the recent days of making it, is velveta ruins it. It melts down to much and makes the potatoes taste weird.

We had that as a kid. I made it a bit differently.

Instead of mashed potatoes I would clean the potatoes really well and cut them into 1/2 to 1 inch cubes leaving the skins on. Cook them until they are almost ready to be mashed but just stir in some butter and sour cream.

Do everything else the same.

It is good stuff. Works really well with the government cheese.

yep real cheese...We grew up poor so government cheese was easily gotten.

There are only two things that I can think of that are good with processed cheese products: nacho cheese sauce and grilled cheese sandwiches. For anything else, Velveeta and Kraft singles should be illegal.

You forgot burgers, and I'm not talking the gourmet kind either. Just good ol' sunday afternoon grillin with the fellas and polishing off a few cases of beer burgers. Singles are good for that too (mostly due to the no knives around drunk people thing).

OK.. CD.. You threw the gauntlet down.. try this..

Get that 'Big Kahuna' bread.. the sweet stuff that comes in a big lump-loaf 'from Hawaii'. Hollow out the lump of bread, making a bowl. Save the part you took out and cut it into 1x1 cubes.. for dipping.

Take -
1 can of refried beans
1 jar of store brand salsa
1 can of 'beef chili'
and the coup d'grace
1 block of Velveeta

Chop up the Velveeta for easy microwaving.. m'wave all that up and pour it in the bread shell on a big plate.

Throw the chunks on the plate, some chips..

Take it to a party..

INSTAHIT.

Nobody will be able to stop eating it.

Tweak it with your own favorite manufactured foods.. but really.. no tweaking is needed.

I keep all of those ingredients on hand all the time.. they are cheap and don't expire.. so last minute parties.. I am ready and always a hit..

I call it.. "Mud".. and yeah.. thats what it looks like..

Dude, kings hawaiian bread is the best bread on earth, hands down. That and pineapple juice used to be my daily breakfast when I lived in hawaii as a kid.
