OK, I'll update this with my new must-have apps:
Mint.com is the number one most used app that I didn't include in my original post. The app isn't all that special, it's the website service that is incredible. The app is just a nice interface...
Google Sync is mandatory to keep everything working right. My Google calendar works better than someone with a WinMo phone using Outlook. It just works, unlike every other solution out there... My contacts stay up to date, my email is perfect, and I'm just very pleased with this. I'm guessing that Android users are wondering why this is a big deal, but every new iPhone user I meet is frustrated with how their calendar/email/contacts work (or don't work, rather).
iVideoCamera let's me record video on my 3G.
FML and TWI are time wasters, but not "must-have".
CardStar let me take all of the little barcode membership tabs off my key ring.
Trapster let's me know about speed traps!
Boxee let's me control the movies on my computer.
The Weather Channel is a bit better than the Apple weather app...
Simplist free is a nice list app.

From my original list, I would remove UrbanSpoon and ProRSS. I use Yelp or the Google website to find businesses and I use iGoogle for my RSS feeds.Become a supporting member!

I have a pay as you go phone with no camera, no apps, no texting and no monthy payments. Am I missing out here?

I rarely use my iPhone as an actual phone. I hate talking on the phone. Instead, it's my little mini-computer that let's me get on the internet no matter where I am...
