Everyone has gone Windows/Desktop for this, so I will go a little meta.
Chrome: Best. Browser. Ever.
Emacs: Those who know, know.
Gentoo Linux: Runs my firewall, web stuff, all my servers. I would deploy it into production at work if I wasn't the only one who could support it.
PostgreSQL: Why pay $70k per CPU when you don't have to.
Django: When you need a tool with a GUI in 20 minutes.
VMware Workstation: Now I only need 2 computers, and an iPad and a smartphone.
Logic: I know it backwards, and I get good results from this.
UA Manley Massive Passive: So good, I don't need to drop $6k on a real one.
NI Reaktor: Those who know, know.
I use these all a lot, I love every single one of them, because they have performed software's most principle task. Each one of these has made my life easier and/or more pleasurable.

I've grown up on Red Hat, and am currently using CentOS (RHEL clone) for servers and Fedora for bleeding-edge development work. What would Gentoo do for me?
I'm avoiding Chrome until it has an addon framework that can run the equivalent of the NoScript addon for FF. And I'm impatient, as I really want the one-process-per-tab that Chrome promises. Here's the status as I understand it with NoScript on Chrome:

I use Centos professionally, which was the basis of of the "production quip".
Gentoo is cool, its similar to BSD in the sense that you have a compiled system, vs. as binary system. It has a super easy way to supply your own compile time switches to installed code, vs. a take what we made you approach with the binary distros. If you know what you are doing, its probably about 10-20% faster for the stuff that needs it and you have all those neat compile options for stuff you always end up recompiling available in an easy conf file and/or ncurses interface.

iTunes (I actually like it, integrates quite well with SirReal's LCD Panel for the Logitech G15)

Digsby (Cannot gush more about this IM application. It's simply wonderful. Managing 7 emails and 2 twitters on it, flawless. Plus all of my settings are carried over to my netbook when I sign in on that)

I don't really think I have anything else noteworthy... A lot of that stuff is used on a daily basis though. Oh!
I do use the built in Windows sidebar. Orbmu2k has some amazing gadgets, and I use a fair number of them from him.
I'd strongly suggest checking him out. Here's his website, translated. (He's german)
