Yeah, the higer the level, the more breaches, but the stronger the wall is too. So unless the guy attacking you wants to send 15-20 spies against your level 10 wall, the breeches are irrelevant. Either way, after level 4, he needs siege equipment.
Also, with spies, for those of you who have yet to use them yet or havent used them much, remember that when your spy sucessfully makes it to a town, you then have the ability to look at that town like you do your own. You can see exactly what buildings he has and what level they are. This is especially important since guys with 0 military strength could still have a level 4 wall preventing you from getting in.

When your spy gets caught, does the person you're spying on get notified that you're trying to spy on him? Common sense tells me that they would, but not sure.

If you upgrade your hideout you can train more spies. Every spy still at home is labeled as 'defending your city' or set to counter-espionage missions. Good old cloak and dagger setting there. The more spies you have defending the higher your detection rate will be apparently. Also your hideout provides a certain amount of protection as well and increases if you upgrade it. Its possible that the defense is ratio based just like the town wall is. If your hideout is 1:1 with your townhall maybe you'll have X base chase to catch spies +Y for every spy at home. If your city outgrows your spy team then things get more difficult.
As for town walls: If 1:1 with your town hall then each level gives 10% defensive bonus. You also get 1 possible breech per level. Its a way to negate the defensive bonus so that people don't build ridiculously large walls and can man it with a single, or two, units to make an impenetrable defense. If you have level 10 walls then you get 100% defensive bonus with a level 10 city, however you can also be breached 10 times to drop that down to 0 (walls effectively destroyed). Level 3 is 30% and 3 breeches to 0. Of course if they don't breech all your walls you'll still have residual defensive bonuses from what isn't breeched.
