I don't think they looked at the 'Left v. Right' perspective of it, they were focusing more on the 4 part for the hand, and just figured a zombie's hand would make more sense than a survivors to be missing a thumb.
Funny though, I never really thought about it being a left hand as opposed to right (then again, I down own the hard-copy of the game for PC, so...)
