I hardly ever see anyone on the TG server at all. I was just wondering when you guys play.

This game doesn't work like that.
Start by reading this sticky. Games get started by people asking people from their friends list if they are up for a game of L4D.
They join a lobby that fills up with people, then they start the game and the server is instantly filled.
Alternatively you can search for public games via quick play or join public lobby.|TG| Kebab-Kastike reporting for duty. | Why? Tubes! The internet is tubes!

There was a game today, generally around 6pm-9pm PST.

Usually later at night (central time 9pm or later)
