Unfortunately, the economy-model for health care, while in theory weeding out doctors like this, also serves to give a lot of business for doctors who give the patient what they want rather than actually what is good for them. There certainly is something to be said for the capitalist model, but your reaction is relatively meaningless and uninformed. Governmental control wouldn't require you to attend a certain physician any more than your insurance company does. Many insurance companies, for instance, (especially HMOs) require you to go to certain physicians.

There is no reason to think that UHC would in any way mandate a certain pediatrician for you based on anything.

That we know of. We have no UHC system in place, so we don't know how exactly it would be. That's why it's important these debates be held in congress and amongst us citizens. I have very little faith that the overbloated US government can handle it well. Something certainly needs to change, but I'm not sure what the best solution is. Maybe it is UHC, but it's going to need to be implemented very carefully and with the highest level of scrutiny from the American people.
