Turbine and Mach4 are small CTF maps. They take far less effort to design and create, so there's plenty of incentive to dress them up, and really Turbine is spartan and Mach4 is overdone and messy.
Castle 3 is large and complicated and it's CP. Yes, it could have more eye candy, but it'd be just that. Okay, here's a gate with a truck behind it. ZOMG PLYWOOD COWS! <3 <3 <3 The space indeed looks very unnatural, but good FPS arenas rarely are natural locations.
In the commentary the devs mention one section of Hydro. The long arc between dish and gate station, that's actually open space, blocked only by a highway guard rail. The discussion was they needed some way to indicate it was the edge of the game world but they didn't want a huge fence or stone wall there because it looked terrible, and after playing around with it, the guard rail and farmland behind it conveyed the out-of-bounds message without actually being noticed. Its lack of presence and social meaning worked transparently.
Castle 3 relies on mile-high sandstone everywhere to define the boundries. No, that's not how Valve would've done that, but the purpose served is the same.
