Assassin's Creed is definitely a lot of fun and even if you buy instead of rent you can pick it up pretty cheap. For me it was one of those games I wished was never over - I could go back and find every templar and flag I guess...I dunno.

Oblivion and Fallout 3 are great if you like wide open RPG games. You can go anywhere and do anything - and both have a good story to follow as well. Assassin's Creed and Mass Effect were great as well but seemed too structured for me - although they still rock.
Forza 2 is just an awesome game. I spent DAYS tuning and painting my cars and then got with a group of guys and raced constantly. Limited amount of tracks (still plenty) but a great simulation game.
Call of Duty series, when playing on Live, is pretty cool - but the solo stories are entirely too short.

I just recently picked up Dead Rising... Classic game, must play it at least once. Just pure fun!

Mass Effect, Oblivion and Fallout 3 are definite must haves. Gears of War, Gears of War 2, Call of Duty World at War was fun as well. Also if you like emo puzzle/problem solving, check out Braid on xLive Arcade.
