          Keyboard throttle, all the time.

Mouse for strafing, bombing, and for getting set up to land.

Joystick for general flying (holding pattern), dogfighting, takeoff, and landing once I am in the "green zone" (for pulling up to slow down), and for taxiing.

For helicopters, I always use keyboard+mouse.

Don't use a joystick to fly a helicopter, especially those that require you to hover. I have yet to see a pilot who uses a joystick to maintain a decent hover. If you can, you're a freaking pimp'in pilot.

This is the truth, yesh. It's been battle-proven too. Just look at the TTP Kashan Scrimzors ;)

For me, I fly mouse and keyboard for jets and helos.

If you find yourself in a fair fight, then you have obviously failed to plan properly.

Straight up Joystick if I'm airborne in any aircraft, and I can hover just fine, thank you.

I use a Microsoft Sidewinder (no force feedback) that I've had for...6 years? I've been thinking I need a new one, but why mess with success?
